Instructions:


In a pan, dry roast the cumin seeds, coriander seeds, fennel seeds, mustard seeds, and fenugreek seeds until fragrant. Grind the spices to a fine powder.


Heat oil in a large pot or pressure cooker over medium heat. Add the sliced onion and fry until golden brown.


Add the minced garlic, ginger paste, and chopped green chilies. Fry for 1-2 minutes.


Add the mutton pieces and fry for 5-7 minutes until browned.


Add the ground spice powder, turmeric powder, red chili powder, and salt. Mix well.


Add the vinegar and water to the pot. Bring to a boil, then reduce the heat and cover the pot. Cook for 1-2 hours until the mutton is tender. If using a pressure cooker, cook for 20-25 minutes after the first whistle.


Once the mutton is cooked, remove the lid and cook on high heat until the gravy thickens.


Garnish with chopped coriander leaves and serve hot with rice or naan.
